Ingredients
- 1 lb. pork neck bones
- 8 to 10 cups water
- 1 onion chopped
- 1 teaspoon salt
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
- ¼ cup toasted garlic
- 3 tablespoons Chili oil with garlic and chili
- ½ cup scallions chopped
- ½ lb. wide rice noodles
Wonton ingredients
- 30 pieces wonton wrapper
- ½ lb. ground pork
- 1 yellow onion minced
- ½ teaspoon garlic powder
- ¼ teaspoon ground black pepper
- ½ teaspoon salt
- 1 teaspoon sesame oil
Instructions
- Pour water in a cooking pot. Let boil.
- Add the pork neck bones and medium chopped onion. Continue to boil between low to medium heat for 1 ½ hours.
- Meanwhile, prepare the wonton by combining all the wonton ingredients in a bowl (except the wrapper). Mix well.
- Scoop 2 teaspoons of pork mixture and arrange it in the middle of the wrapper. Seal by folding the wrapper in a way that both ends meet together forming a triangular shape. Press against the side of the wonton to ensure that it remains intact. Set aside.
- Remove the pork neck bones from the pot. Set it aside. (You can use it to make another dish).
- Add 1 teaspoon salt, 1 teaspoon garlic powder, and ½ teaspoon ground black pepper in the cooking pot. Stir.
- Add the noodles and wonton into the pot. Let the liquid re-boil. Continue to cook 8 minutes.
- Add the scallions and half of the chili oil and toasted garlic. Cook for 2 minutes.
- Transfer to a bowl. Top with remaining toasted garlic and chili oil.
- Serve. Share and enjoy!
Notes
- Sichuan wontons are a popular Chinese dish known for their flavorful, spicy kick. They feature dumplings filled with a seasoned mixture of meat and vegetables, typically served in a tangy, spicy sauce rather than in a broth. The recipe is quite similar to our spicy wonton soup, but without the added noodles and soup. Instead, Sichuan wontons are often tossed in a spicy sauce made with ingredients like chili oil, garlic, and soy sauce, offering a bold, flavorful experience with a slightly different presentation!
- A dumpling is a type of food that usually consists of bite-sized pieces of dough filled with a tasty mix of meat or other ingredients. These can be steamed, fried, or boiled, and are generally packed with flavor. The filling varies widely, from vegetarian options to meaty blends like ground pork and shrimp, as seen in dishes like siomai.
- Wontons, however, stand out from other dumplings. While many dumplings are often steamed or fried, wontons are specifically made to be boiled in soup. This is their main distinction: unlike other dumplings, wontons are designed to be served in a flavorful broth (like our spicy wonton soup). And locally, they can be referred to as molo!
