Spiked Strawberry Lemonade

Spiked Strawberry Lemonade blends a simple syrup with fresh strawberry and mint puree, lemon juice, water, and vodka. The drink offers a fresh fruit flavor with herbal notes and can be garnished with lemon slices and mint leaves. The simple syrup can be prepared ahead and stored, making the cocktail easy to assemble when desired.

Description

This cocktail combines homemade simple syrup—made by dissolving sugar in water over heat and cooling—with a puree of fresh strawberries and mint leaves for a fruity and aromatic base. Freshly squeezed lemon juice adds acidity and brightness, while water dilutes the mixture to make it refreshing. Vodka provides the alcoholic component without overpowering the flavors. The drink is stirred together in a pitcher and served over ice, garnished with lemon wedges and extra mint. The simple syrup can be made in advance and kept refrigerated for up to a month. Fresh lemon juice is recommended for best flavor, though bottled lemon juice is a possible substitute.

Ingredients

Servings

Simple Syrup

  • 1 cup granulated sugar
  • 1 cup water

Cocktail

  • 1 pint strawberry stems removed, fresh
  • 1 tablespoon mint plus more for garnish, leaves
  • 1 cup lemon juice fresh
  • 4 cups water
  • 1 ½ cups vodka
  • lemon for garnish, slices or wedges

Instructions

  1. Combine sugar and water in a saucepan over medium heat, stirring occasionally. Bring to a boil, and then reduce to simmer until sugar dissolves, about 5 minutes.
  2. Remove saucepan from heat and allow to cool, about 30 minutes. (You can make this syrup up to 1 month in advance. Store in an airtight container in the fridge until ready to use.)
  3. Puree strawberries and mint leaves together in blender or food processor.
  4. Combine all the simple syrup, strawberry-mint puree, lemon juice, water, and vodka in a 2.5-quart pitcher. Stir to combine.
  5. Fill rocks glasses with ice and pour in the lemonade. Garnish with a lemon slice or wedge and some more fresh mint, if desired.

Notes

  • For optimal flavor, use fresh lemon juice rather than bottled, though bottled juice can work in a pinch.
