Description
This recipe uses rolled puff pastry sheets as the base, spread with a mixture of thawed and well-drained chopped spinach combined with feta cheese, mozzarella, finely diced green onion, minced garlic, and seasoning. The puff pastry edges are left clear, and the pastry is rolled from both ends toward the center, forming a double-rolled log. Chilling the shaped pastry in the freezer firms it for cleaner slicing.
Once cold, the log is sliced into thin rounds which are placed on a baking sheet or air fryer tray and cooked until golden brown and baked through. The result is a crisp, buttery pastry exterior with a soft cheese and spinach filling that blends savory and mild flavors with a touch of garlic and onion.

Ingredients
- 2 Puff pastry sheets (rolled, thawed according to package instructions)
Filling
- spinach thawed and squeezed dry, frozen, chopped, 10-ounce package
- 1 cup feta cheese crumbled
- ¼ cup mozzarella cheese (shredded)
- 1 green onion finely diced green part only, stalk
- 2 garlic small, finely minced, cloves
- salt to taste
- black pepper to taste
Instructions
- Unroll the puff pastry sheet out on a cutting board or kitchen counter.
- In a medium bowl mix all filling ingredients.
- Spread this mixture on the puff pastry, leaving a ½-inch border all the way around.
- Starting from one end of the puff pastry. Tightly roll one side of the puff pastry towards the center.
- Then start from the other side and roll that into the center.
- Wrap it tightly with plastic wrap and place it in the freezer until slightly firm (about 30 minutes).
- Preheat the oven to 400°F or Preheat Air Fryer to 350°F.
- Remove from freezer. With a very sharp knife, cut ½-inch slices. Place them on a parchment paper lined baking sheet or lightly greased Air Fryer tray/basket.

- Serve immediately or at room temperature.
