Description
Spinach and Feta Pizza uses fresh pizza dough as a base, topped with a blend of sun-dried tomato pesto and traditional pizza sauce. Fresh baby spinach is scattered before mozzarella cheese covers the surface, providing a mild and creamy component. Cooked and crumbled bacon adds a crispy, smoky element. After an initial bake to set the base, crumbled feta cheese goes on top for creamy, tangy notes, and the pizza goes back in the oven until the crust is golden and the cheese is bubbling and browned.
The sun-dried tomato pesto, prepared from julienned oil-packed sun-dried tomatoes, Parmesan cheese, toasted pine nuts, and olive oil, enhances the depth of flavor. This pizza is suited for casual meals or gatherings where a distinctive topping combination is welcome.
Ingredients
- 1 lb pizza dough or enough to make a large pizza, fresh
- 12 lices Bacon cooked, drained, and crumbled
- 1/3 cup sun-dried tomato pesto see recipe below, homemade
- 1/3 cup pizza sauce
- 2-3 handfuls spinach fresh baby
- 2 cups mozzarella cheese about 8 oz, shredded
- 2/3 cup feta cheese
Easy Homemade Sun-Dried Tomato Pesto By: Natalie from Perry's Plate (yield 2 1/2 - 3 cups):
- 2 cups sun-dried tomatoes sliced thinly, I bought mine julienned, oil-packed
- 1 cup Parmesan Cheese or Romano cheese, shredded fresh
- 1/3 cup pine nuts toasted
- extra-virgin olive oil as needed
Instructions
- Spread pizza dough out into a rimmed cookie sheet (or round pizza pan, stone, peel or whatever you usually use). Combine pesto and pizza sauce in a small bowl. Spread over stretched pizza dough. Top with fresh spinach, then mozzarella.
- Bake for about 10-12 minutes or until the crust is firmed up, but not yet golden brown. Remove pizza from oven and top with crumbled bacon and feta cheese. Return pizza to the oven and bake for another 5-8 minutes or so until crust is golden brown underneath and the cheese is bubbly and browning.
- Remove and serve.
For the Pesto:
- Combine tomatoes, cheese, and pine nuts in a food processor and pulse/blend until thoroughly combined. Drizzle a little oil in if it gets to thick to process.
