Ingredients

  • ½ cup yogurt reduced-fat or whole, plain, Greek
  • 2 tablespoons scallions finely chopped
  • 2 teaspoons lemon juice freshly squeezed
  • 1 tablespoon dill divided, fresh, chopped, 2 teaspoons
  • salt coarse salt, freshly ground black pepper
  • black pepper coarse salt, freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • ½ cup onion finely chopped
  • 2 garlic finely chopped, cloves
  • 5 ounces baby spinach chopped
  • 2 egg beaten, large
  • 1 ¼ cups quinoa cooked
  • 2 ounces feta cheese crumbled
  • ¼ teaspoon lemon zest, grated
  • ½ cup bread crumbs
