Spinach and Kale Greek Yogurt Dip
Description
Combining finely chopped spinach, kale, green onion, red bell pepper, carrot, and garlic with Greek yogurt and mayonnaise creates a creamy dip with layers of texture and freshness. The addition of honey and spices like smoked paprika, salt, and black pepper balance the creamy tartness of the yogurt and savory notes of the vegetables. This dip is stirred until well mixed and benefits from sitting in the refrigerator for a few hours, allowing flavors to meld.
The texture is smooth with small vegetable bits throughout, providing mild vegetable crunch and herbal brightness. It is a good option for snacking with chips or pairing with raw vegetables as a healthy accompaniment. Optional ingredients like water chestnuts and marinated artichokes can add extra crunch and flavor complexity if included.
Ingredients
- 1 Greek yogurt 2%, 17-ounce container, or about 2 cups of your favorite
- 3 tablespoons mayonnaise
- 2 tablespoons honey
- 1 cup kale finely chopped
- 1 cup spinach finely chopped
- 3 green onion finely chopped, thin
- 1/3 cup red bell pepper finely chopped
- 1/4 cup carrot finely chopped

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika
- if desired, chopped water chestnuts and chopped marinated artichoke hearts
Instructions
- Combine all ingredients in a bowl and mix well to combine. The key is to chop everything as finely as possible! This dip is extra flavorful after it sits for a few hours (refrigerated of course). Taste and season more if desired. Serve with chips, crackers or vegetables.
