Spinach and Kale Greek Yogurt Dip

This Spinach and Kale Greek Yogurt Dip blends finely chopped greens, vegetables, and a creamy mixture of Greek yogurt, mayonnaise, honey, and spices. The dip offers a fresh texture from leafy spinach and kale balanced by the smooth, tangy yogurt base. It is versatile for pairing with chips, crackers, or fresh vegetables and develops deeper flavor when allowed to chill before serving.

Description

Combining finely chopped spinach, kale, green onion, red bell pepper, carrot, and garlic with Greek yogurt and mayonnaise creates a creamy dip with layers of texture and freshness. The addition of honey and spices like smoked paprika, salt, and black pepper balance the creamy tartness of the yogurt and savory notes of the vegetables. This dip is stirred until well mixed and benefits from sitting in the refrigerator for a few hours, allowing flavors to meld.

The texture is smooth with small vegetable bits throughout, providing mild vegetable crunch and herbal brightness. It is a good option for snacking with chips or pairing with raw vegetables as a healthy accompaniment. Optional ingredients like water chestnuts and marinated artichokes can add extra crunch and flavor complexity if included.
