Ingredients
- 1 tablespoon olive oil
- 1 ½ cups chopped onion about 1 medium onion
- 2 teaspoons minced garlic
- 1 (13-ounce) package smoked sausage
- ½ cup chicken stock
- 1 (14.5-ounce) can fire-roasted diced tomatoes
- 1 teaspoon ground thyme
- ½ teaspoon dried rosemary
- ½ teaspoon rubbed sage
- ½ dried parsley
- ½ teaspoon garlic powder
- seasoned salt, to taste
- ground black pepper, to taste
- 1 (16-ounce) package uncooked gnocchi
- 1 cup fresh spinach
- ½ cup grated Mozzarella cheese
- ¼ cup grated Parmesan cheese
Instructions
- Preheat the oven to 425 degrees Fahrenheit and move a rack into the upper third of the oven. Heat a large oven-safe skillet on the stove over medium-high heat.
- Slice 1 (13-ounce) package smoked sausage into ¼-inch thick coins and add it to the skillet. Cook over high heat until lightly browned or about 4-6 minutes.
- Reduce the heat to medium-high and add 1 tablespoon olive oil. Add 1 ½ cups chopped onion and cook for about 4 minutes until it begins to turn translucent. Add 2 teaspoons minced garlic and cook and stir for another 30 seconds.
- Add ½ cup chicken stock, 1 (14.5-ounce) can fire-roasted diced tomatoes, 1 teaspoon ground thyme, ½ teaspoon dried rosemary, ½ teaspoon rubbed sage, ½ dried parsley, ½ teaspoon garlic powder, seasoned salt, ground black pepper, and 1 (16-ounce) package uncooked gnocchi. Stir until everything is well combined. Gently stir in 1 cup fresh spinach and make sure everything is covered with liquid.
- Top with ½ cup grated mozzarella cheese and ¼ cup grated parmesan cheese, then place the skillet in the oven. Bake for 17-22 minutes. If desired, turn on the broiler at the end and broil for another 2-3 minutes to get the cheese topping extra browned and delicious.
- Remove the skillet from the oven and top with a sprinkle of additional salt, pepper, and chopped fresh thyme if desired. Serve immediately.
