  • 4 chicken breast boneless skinless, pounded thin or cut in half lengthwise
  • 2 cups spinach leaves, chopped
  • 6 ounces artichoke hearts quartered, marinated, roughly chopped
  • 1/2 /2 cup Parmesan Cheese grated
  • 1/3 /3 cup mayonnaise
  • 1/3 /3 cup sour cream
  • 2 cloves garlic minced
  • 4 lices mozzarella cheese
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Season chicken breasts with salt and pepper and place in a 9x13 baking dish.
  3. In a medium bowl, combine the spinach, artichokes, Parmesan cheese, mayonnaise, sour cream, and garlic until well blended. Spread on top of the chicken breasts covering completely. Place a slice of mozzarella cheese on top.
  4. Bake for 35-40 minutes or until chicken is no longer pink.
