Spinach Artichoke Pasta Salad

Spinach Artichoke Pasta Salad merges rotini pasta with a creamy blend of sour cream, mayonnaise, and vegetable soup mix for a tangy dressing. Fresh spinach, green onions, and quartered artichoke hearts introduce bright, fresh vegetable notes and a tender texture contrast. Chilled and served cold, this salad offers a creamy, savory accompaniment suited for potlucks or as a cool side dish.

Description

This Spinach Artichoke Pasta Salad features cooked al dente rotini pasta tossed in a creamy dressing composed of sour cream, mayonnaise, and dry vegetable soup mix. The soup mix enhances the dressing's depth with herb and savory undertones. Fresh chopped spinach and sliced green onions contribute a crisp, green freshness, while water-packed artichoke hearts bring a mild tang and soft texture.

The pasta and vegetables are combined gently to maintain textural integrity, then chilled for about an hour before serving, allowing flavors to meld and the dressing to thicken slightly. The salad presents a creamy yet bright profile, balancing richness from the dairy and mayonnaise with the characteristic tang and aroma of spinach and artichoke.

This dish suits casual meals, picnics, or buffet spreads where a cold, flavorful pasta option is welcomed. It can accompany grilled meats or stand alone as a vegetarian side. The chilled preparation enhances refreshment and mouthfeel.
