Spinach, Bacon and Cheese Strata

The Spinach, Bacon and Cheese Strata is a layered baked dish featuring crispy bacon, sautéed spinach with garlic and onions, and a rich custardy egg mixture poured over whole wheat bread cubes and cheese. Refrigerated overnight, it allows the bread to soak up the flavors, yielding a tender, savory breakfast or brunch dish with melted gruyere and smoked mozzarella.

Description

This strata combines cooked bacon, sautéed onions, garlic, and wilted spinach layered between cubes of whole wheat or sourdough bread and grated cheeses like gruyere and smoked mozzarella. An egg mixture enriched with Dijon mustard, fresh thyme, nutmeg, Greek yogurt, milk, salt, and pepper is poured over the layers. Refrigerating it covered overnight allows the custard to soak in fully, resulting in a baked casserole with a silky texture inside contrasted by a slightly crisp top.

The dish cooks uncovered after resting and develops a savory, cheesy profile complemented by the earthiness of spinach and smoky bacon. The fresh herbs and Dijon add brightness and depth. This strata serves well as a hearty breakfast, brunch, or light dinner option.

Letting the dish rest at room temperature before baking helps promote even cooking. The recipe layers ingredients evenly in a ceramic baking dish for consistent texture and flavor throughout.

Ingredients

Servings
  • 4 lices Bacon
  • 1 cup yellow onion diced
  • 3 cloves garlic grated
  • 5 ounces baby spinach
  • 8 ounces whole wheat bread or sourdough bread, crusty artisan
  • 6 egg
  • 2 egg white
  • 2 tablespoon Dijon mustard
  • 1 teaspoon thyme chopped, fresh leaves
  • 1/8 teaspoon ground nutmeg
  • 1 1/4 cups milk I used 2%
  • 1/2 cup yogurt plain, Greek
  • 3/4 teaspoon kosher salt
  • black pepper fresh ground, to taste
  • 3/4 cup gruyere cheese grated
  • 1/2 cup mozzarella cheese grated smoked

Instructions

  1. In a large non-stick skillet over medium heat cook the bacon until browned and crisp. Remove from the skillet onto a plate lined with paper towels.
  2. Remove all of the bacon grease except for 1 tablespoon from the skillet. Add in the diced onions and sauté for 3 minutes. Add in the baby spinach and grated garlic and sauté until the spinach is wilted, about 2-3 minutes. Remove from the heat and set aside.
  3. In a large bowl whisk together the eggs, egg whites, Dijon, thyme, nutmeg, milk, Greek yogurt, salt and pepper until combined.
  4. Spray a 3-quart ceramic baking dish with cooking spray. Spread one-third of the bread cubes into the dish. Add one-third of spinach mixture, bacon and cheese. Repeat layering twice with remaining bread, spinach, bacon and cheese.
  5. Pour the egg mixture evenly over the strata and cover the baking dish with plastic wrap. Refrigerate at least 8 hours or overnight.
  6. The next day, let it stand at room temperature for 30 minutes while preheating the oven to 350°F. Bake the strata, uncovered, on the middle rack of oven until puffed, golden brown, and cooked through, 50 to 65 minutes. If the strata starts to get too brown on top, cover it loosely with a piece of foil. Let stand 5 minutes before serving.
