Description
Spinach Gratin starts by softening minced onions or shallots in butter, then adding garlic until fragrant. Light cream and cream cheese are stirred in and simmered until thickened, creating a creamy base seasoned with salt and pepper. Shredded Havarti and Parmesan cheese are folded in before adding thoroughly drained, thawed chopped spinach, integrating the greens fully into the sauce.
This mixture is spread into a baking dish and topped with the remaining cheese and optional panko bread crumbs, which add a subtle crispy texture when baked. Baking at 400°F for 15-20 minutes allows the gratin to heat through and develop a lightly browned top, giving a pleasing contrast between creamy spinach and a golden crust.
Spinach gratin works well as a side dish to accompany proteins or can be served as a comforting, creamy vegetable dish. It highlights the mild flavor of spinach enriched with nuanced cheese flavors and a buttery, garlicky sauce.
Fresh spinach may be substituted by removing stems and wilting it in a pan before folding into the cream mixture. When preparing ahead and refrigerating the gratin, extend baking time by about 10 minutes to ensure it is thoroughly heated.
Ingredients
- 2 tablespoons onion or shallot, minced
- 1 tablespoon butter
- 1 clove garlic minced
- ⅔ cup light cream
- 4 ounces cream cheese
- ⅛ teaspoon salt or to taste
- black pepper to taste
- 20 ounces spinach 2 x 10 oz packages, thawed and squeezed dry, frozen, chopped
- ½ cup havarti cheese divided, shredded
- ¼ cup Parmesan Cheese divided, shredded
- 1 tablespoon panko bread crumbs optional
Instructions
- Preheat oven to 400°F.
- Add onion and butter to the pan and cook on medium-low heat until onion is softened.
- Add garlic and cook until fragrant, about 1 minute. Stir in cream, cream cheese, and salt & pepper until smooth. Simmer 1-2 minutes or until thickened.
- Remove from the heat and stir in ¼ cup Havarti and 2 tablespoons Parmesan cheese. Add spinach to mixture.
- Spread spinach mixture into a 1 ½ qt baking dish. Top with remaining cheese and bread crumbs and bake 15-20 minutes or until heated through.
Notes
- You can substitute 1 pound of fresh spinach by removing stems and cooking until wilted before adding.
- If refrigerated before baking, increase the bake time by about 10 minutes to heat through.
