Description
Spinach Lasagna Roll Ups combine cooked lasagna noodles filled with a creamy mixture of ricotta cheese, well-drained spinach, Parmesan cheese, and egg to bind, seasoned simply with salt and pepper. Rolled neatly, the noodles are placed seam-side down in a baking dish layered with homemade marinara sauce. Topped with additional sauce and a sprinkling of mozzarella, they bake covered until the cheese melts and bubbles gently.
The result is a tender pasta roll with a smooth, cheesy spinach center contrasted by the slightly tangy tomato sauce. This method focuses on individual servings that maintain their structure, allowing for easy plating and portion control.
To serve, place a little warmed marinara sauce on each plate and top with a roll up. These can be served as a main dish with a simple salad or steamed vegetables for a well-rounded meal.
Ingredients
- 2 cups marinara sauce plus more for serving, homemade
- 9 lasagna noodles wheat or gluten-free, uncooked
- 10 oz spinach thawed and squeezed well, frozen, chopped, package
- 15 oz ricotta cheese I like Polly-o, part skim
- 1/2 cup Parmesan Cheese grated
- 1 egg large
- kosher salt
- black pepper
- 9 tbsp mozzarella cheese part skim, shredded, about 3 oz
Instructions
- Preheat oven to 350°F. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.
- Cook noodles according to package directions, then drain.
- Combine spinach, ricotta, Parmesan, egg, 1/2 teaspoon salt and black pepper in a medium bowl and mix.
- Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.
- Ladle remaining sauce over the noodles and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.
- To serve, ladle a little sauce on the plate and top with lasagna roll.
