Spinach Quiche

Ingredients

  • 1 pie crust chilled, homemade or store-bought
  • 5 ounces spinach fresh baby
  • 6 egg large
  • 1/2 cup almond milk unsweetened; or whole milk
  • 1 cup feta cheese crumbled
  • 1 cup green onion chopped
  • 1/4 teaspoon salt sea salt
  • black pepper freshly ground, to taste

Instructions

  1. Preheat the oven to 425°F. Roll out the chilled pie crust to fit a 9-inch pie dish. Press the dough into the dish and crimp the edges. Chill in the refrigerator.
  2. Prick the bottom of the crust with a fork, line with parchment, and fill with pie weights. Bake for 15 minutes, then remove weights and bake for another 5-8 minutes.
  3. Lower the oven temperature to 350°F. Steam the spinach until wilted, then squeeze out excess water.
  4. Whisk eggs and milk in a bowl. Add spinach, feta, green onions, salt, and pepper. Pour into the crust and smooth the top.
  5. Bake the quiche for 40-50 minutes until set. Let cool for 10 minutes before slicing. DEVOUR!
