  • cup red onion thinly sliced
  • apple cider vinegar used as dressing
  • 1 heaping cup pecans candied
  • 2 ounces goat cheese crumbled, or ¼ cup shaved pecorino cheese
  • cup dried cranberries
  • salt sea salt; freshly ground black pepper
  • black pepper sea salt; freshly ground black pepper

Instructions

  1. In a large bowl, place the spinach, apple, and onion. Add some of the dressing and toss to combine.
  2. Add the pecans, goat cheese, and cranberries and gently toss. Add more dressing, as desired. Season to taste and serve.
