Spinach Salad
Description
This salad layers fresh, mild spinach with crisp apple slices and sharp red onion for a mix of refreshing and piquant flavors. The addition of dried cranberries adds bursts of sweetness, while crumbled goat cheese or shaved pecorino introduces creamy, tangy notes. Candied pecans contribute a crunchy textural contrast and a buttery sweetness that complements both the cheese and fruit.
The dressing of apple cider vinegar lightens the salad with bright acidity, helping to meld the diverse ingredients while maintaining their individual character. The recipe emphasizes gentle tossing to preserve the delicate leaves and evenly distribute the dressing without soaking the salad.
This salad works well as a light side dish or a starter. It pairs nicely with roasted or grilled meats, particularly poultry, and is suitable for luncheons or casual dinners. The simple but balanced combination delivers a satisfying range of textures and flavors in each bite.
