An easy and delicious chicken spinach salad, with the bright flavors of orange and avocado.

Ingredients
The salad:
- 6 cups spinach packed leaves
- 2 chicken breast torn into strips, boneless, skinless, cooked
- 2 navel orange cut into segments, large
- 1 avocado cut into 1-inch pieces, small
- ½ jalapeno pepper minced, red
Dressing:
- 4 green onions green & white parts, roughly chopped
- ¼ cup canola oil
- 2 tablespoons rice vinegar
- 1 teaspoon soy sauce
- 1 teaspoon sesame oil
- 1 garlic minced, clove
- 1 teaspoon ginger fresh, minced
Instructions
- In a large bowl, toss together the spinach, chicken, orange, avocado, and jalapenos.
- For the dressing, combine all of the ingredients in a blender and puree until the mixture is smooth, about 30 seconds.
- Toss the salad with the dressing. Serve.
