Description
The salad starts with fresh, washed spinach as a green base. Bacon is cooked until crisp and removed from the pan, leaving flavorful drippings behind. Shallots and garlic are softened gently in the drippings, then red wine vinegar, Dijon mustard, and sugar are added and simmered to create a balanced dressing combining savory bacon fat, acidity from vinegar, tang from mustard, and sweetness from sugar. Olive oil is whisked in at the end to smooth and emulsify the dressing.
The warm dressing is tossed with the raw spinach leaves, which wilts them slightly while coating them in flavor. The salad is finished with slices of crisp bacon, sautéed mushrooms, thinly sliced red onions, toasted slivered almonds, and optionally a sprinkle of shredded Parmesan cheese. This combination offers a mix of textures and a rich taste profile from salty, tangy, sweet, and nutty elements.

Ingredients
- 2 bunches spinach washed, fresh
- 6 lices Bacon
- 1 ½ cups mushroom sliced
- ½ small red onion sliced
- ½ cup almonds toasted, slivered
- 2 tablespoons Parmesan Cheese optional, shredded
Dressing
- bacon drippings
- 2 tablespoons shallot or onion, minced
- 1 clove garlic minced
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 ½ teaspoons granulated sugar
- 2 to 3 tablespoons olive oil
Instructions
- Wash and dry spinach. Place in a large bowl and set aside.
- Cook bacon until crisp. Remove from pan and set aside reserving drippings.
- Turn bacon drippings down to low and add shallot. Cook 2-3 minutes or until tender. Stir in garlic and cook 1 minute more.
- Add red wine vinegar, Dijon mustard and sugar. Simmer 1 minute. Whisk in olive oil until the dressing is smooth.
- Pour warm dressing over spinach and toss. Top with remaining ingredients and serve immediately.
Notes
- Adding sliced hard boiled eggs is an optional addition that brings a creamy texture and extra protein to the salad.
