For the Salad:

  • 12 cups spinach fresh
  • 16 oz strawberries Sliced
  • 1/2 red onion Thinly Sliced
  • 1 cup feta cheese crumbled
  • 1 cup pecans Chopped, raw

For the Dressing:

  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 2 Tablespoons poppy seeds
  • 2 Tablespoons honey
  • 2 Tablespoons Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt sea salt
  • 1/2 teaspoon black pepper

Instructions

  1. Combine all the dressing ingredients in a small bowl. Whisk thoroughly for 2-3 minutes until all the ingredients are well combined or place all the ingredients in a jar with a lid and shake until well combined.  
  2. Place the spinach in a large bowl or individual serving bowls.
  3. Add the strawberries and red onions on top for the salad mixture.
  4. The drizzle the dressing over the salad and toss to thoroughly coat. You want enough dressing to coat the ingredients but not drown them.
  5. Then top with the cheese and pecans.
  6. Serve immediately and enjoy!
