Spinach Stuffed Chicken
Description
This recipe uses chicken breasts carefully slit to form pockets, which are then filled with a blend of fresh spinach, Parmesan and mozzarella cheeses, softened cream cheese, and minced garlic. The chicken is coated in olive oil and rubbed with a seasoning blend including paprika, Italian seasoning, garlic powder, onion powder, and salt for balanced flavor on the outside. Baking at 375°F for 30 minutes allows the cheese filling to melt and the chicken to cook through, creating a juicy and moist entree. The spinach adds freshness and color to the creamy filling. Ingredients
- 4 chicken breast about 1 pound, boneless skinless
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 2 cups spinach chopped, fresh
- ¼ cup Parmesan Cheese grated
- ¼ cup mozzarella cheese shredded
- 2 tablespoons cream cheese softened
- 2 cloves garlic minced
- parsley chopped, for garnish, fresh
Instructions
- Preheat oven to 375 degrees F. Spray a baking sheet with non-stick cooking spray and set aside.
- Cut a slit into the side of each chicken breast to create a pocket for the filling. (You don't want to cut all the way through.) Place the prepared chicken in a large mixing bowl, drizzle with oil, and toss to coat.
- In a small bowl, combine the paprika, salt, Italian seasoning, garlic powder, and onion powder. Sprinkle over chicken and rub to make sure the outsides are seasoned.
- In another mixing bowl, mix together spinach, Parmesan, mozzarella, cream cheese, and garlic until evenly combined.
- Place the chicken breasts on the prepared baking sheet. Stuff each breast with 1/4 of the spinach mixture. Use a spoon or your fingers to spread the mixture evenly inside the pocket.
- Bake for 30 minutes until chicken is cooked through to 165 degrees F and filling is melty.
- Remove from the oven and serve immediately. You can sprinkle a little chopped parsley on top for garnish, if desired.
