Spinach Stuffed Chicken Breasts
Description
This recipe starts by slicing into each chicken breast half about three-quarters of the way through, creating a pocket for the stuffing. The filling includes thawed and well-drained spinach mixed with room temperature cream cheese, Parmesan cheese, fresh chives, and minced garlic, forming a creamy and flavorful interior.
The stuffed chicken breasts are then wrapped carefully with two slices of bacon each, arranged on a baking sheet and roasted at 375°F until fully cooked, typically 30 to 40 minutes. The oven temperature is increased to 400°F or placed under a low broil near the end of cooking to crisp the bacon wrapping.
The final result is a moist chicken breast with a creamy and savory spinach-cheese center balanced by the smoky and crispy bacon exterior. This dish can be served as an entrée with sides of vegetables or grains.
Ingredients
- 4 chicken breast halves
- 10 ounce spinach thawed and squeezed dry, frozen, chopped, package
- 4 ounces cream cheese room temperature, ⅓ less fat
- ¼ cup Parmesan Cheese you could use ½ cup of feta cheese as well.... or a combo of both
- 2 Tablespoons chives sliced thin, chopped fresh
- 4 cloves garlic
- 8 trips Bacon
- salt to taste
- black pepper to taste
Instructions
- Preheat oven to 375 degrees F.
- Place each chicken breast on a flat surface. With your hand placed flat on each piece, cut about ¾ quarter of the way through.(careful not to cut all the way through)
- Blend spinach, cream cheese, parmesan cheese, chives and garlic in medium bowl.
- Spoon ¼ of cheese mixture into the middle of the cut chicken breasts.
- Wrap each breast with 2 slices of bacon.
- Arrange chicken breasts on baking sheet.
- Cook for 30-40 minutes.
- Then turn the temperature up to 400 degrees F (or on low broil) and cook for about 15 more minutes to get the bacon nice and crispy.
