Description

This recipe starts by slicing into each chicken breast half about three-quarters of the way through, creating a pocket for the stuffing. Ingredients

  • 4 chicken breast halves
  • 10 ounce spinach thawed and squeezed dry, frozen, chopped, package
  • 4 ounces cream cheese room temperature, ⅓ less fat
  • ¼ cup Parmesan Cheese you could use ½ cup of feta cheese as well.... or a combo of both
  • 2 Tablespoons chives sliced thin, chopped fresh
  • 4 cloves garlic
  • 8 trips Bacon
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat oven to 375 degrees F.
  2. Place each chicken breast on a flat surface. With your hand placed flat on each piece, cut about ¾ quarter of the way through.(careful not to cut all the way through)
  3. Blend spinach, cream cheese, parmesan cheese, chives and garlic in medium bowl.
  4. Spoon ¼ of cheese mixture into the middle of the cut chicken breasts.
  5. Wrap each breast with 2 slices of bacon.
  6. Arrange chicken breasts on baking sheet.
  7. Cook for 30-40 minutes.
  8. Then turn the temperature up to 400 degrees F (or on low broil) and cook for about 15 more minutes to get the bacon nice and crispy.
