Spinach Stuffed Mushrooms

These Spinach Stuffed Mushrooms use large portabella caps filled with a savory mixture of fresh sautéed spinach, garlic, and onion, seasoned with salt and pepper. Topped with marinara sauce and shredded mozzarella cheese, then baked until the cheese melts and the mushrooms soften, this recipe balances fresh vegetable flavor with comforting cheese and tomato.

Description

Portabella mushroom caps serve as a hearty base for the stuffing of sautéed spinach combined with garlic and chopped onions, seasoned simply with salt and pepper. The filling is tender and flavorful due to the gentle sautéing, which softens the greens and aromatics before stuffing.

Marinara sauce adds acidity and brightness when spooned atop the stuffed mushrooms, along with shredded low-moisture mozzarella that melts during baking to create a creamy, mild topping. Baking at moderate heat softens the mushrooms and integrates the flavors while developing a slight golden topping on the cheese.

This dish works well as an appetizer or side with meals that could benefit from vegetable and cheese components. Leftover marinara can be served alongside for extra dipping. It requires basic ingredients and straightforward preparation, making it approachable for home cooks.
