Spiral Cucumber Salad: Korean Style

Spiral Cucumber Salad: Korean Style features mini cucumbers cut into thin spiral slices using a chopstick technique to prevent cutting through, then salted to extract moisture. Tossed with a spicy Asian dressing of soy sauce, rice vinegar, sesame oil, sugar, minced garlic, toasted sesame seeds, and gochugaru, this salad offers a crisp, refreshing texture with a bright, savory, and spicy flavor. It is served cold, making it a cooling side dish or appetizer.

Description

This salad utilizes mini cucumbers cut in two directions by slicing between chopsticks to create delicate, spiral thin slices. Salting the cucumbers helps draw out excess liquid, which is rinsed away before dressing. The dressing combines soy sauce, rice vinegar, sesame oil, sugar, fresh garlic, toasted sesame seeds, and Korean red pepper flakes (gochugaru), lending the salad a balance of savory, tangy, nutty, and spicy notes. The final toss coats the cucumbers just before serving, preserving the crisp texture.

The bright flavors and crunchy texture make this salad a refreshing accompaniment to rich or spicy dishes. Its cold serving temperature adds a cooling contrast typical of Korean side dishes. Preparation steps like salting and rinsing ensure the salad is not watery, keeping a pleasant crispness.

Ingredients

Servings
  • 4 cucumber mini
  • 1 tablespoon salt (to remove liquid from cucumber)

Spicy Asian Salad Dressing

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar (or to taste)
  • 2-3 garlic cloves, minced
  • 1 tablespoon sesame seeds toasted
  • 1 tablespoon gochugaru or to taste, Korean red pepper flakes

Instructions

How to Cut Spiral Cucumbers

  1. Wash and dry mini cucumbers.
  2. Secure the cucumber between 2 chopsticks. This will prevent you from cutting through the cucumber.
  3. Make thin straight cuts (90 degree angle), about 2 mm slices.
  4. Flip the cucumber over (with the unsliced surface facing you), make thin diagonal slices (45 degree angle).

How to Make Asian Cucumber Salad

  1. Place the spiral cucumber into a bowl and repeat with the remaining cucumbers. Add salt to the cucumbers. Use your hands to gently distribute the salt. Place it in the refrigerator for 15 minutes.
  2. In the meantime, whisk together soy sauce, rice vinegar, sesame oil sugar, garlic, sesame seeds, and gochugaru (Korean red pepper flakes).
  3. Rinse the cucumbers under cold tap water 2-3 times and pat them dry with a paper towel.
  4. Combine the cucumbers with the dressing right before serving. Serve cold.
