  • 1/2 cup cherry tomato halved yellow
  • 1/2 cup tomato halved yellow red
  • 2 garlic minced, medium cloves
  • 2 tbsp parsley plus 1 tsp for garnish, fresh, minced
  • 1 tsp oregano dried
  • 1 tbsp red wine vinegar
  • 10 kalamata olives pitted
  • 1 tbsp extra virgin olive oil
  • 2 beet peeled and spiralized, small
  • 1/2 onion peeled and spiralized, small
  • kosher salt to taste
  • black pepper to taste
  • 4 oz feta cheese half block cut horizontally, or halloumi cheese

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl combine all the ingredients except for the cheese and parsley for garnish.
  3. Place the cheese in the center of a large oven-safe skillet or casserole dish. Top and surround it with beet noodle mixture.
  4. Cover with foil and bake 20 minutes, until the beet noodles wilt.
  5. Serve hot garnished with remaining parsley.
