Split Pea Soup
Description
This soup begins by sautéing butter with onion, carrots, celery, and garlic until softened, perfuming the pot. Adding dried split peas, chicken broth, and a ham bone allows the peas to cook down and release starch, thickening the soup during 60 to 90 minutes of simmering. The ham bone imparts smoked richness and depth of flavor to the broth.
Once peas are fully split and tender, removing the bone and shredding its meat back into the soup provides texture and smoky notes complemented by fresh thyme, salt, and pepper seasoning. The resulting soup is thick, velvety, and savory with hearty vegetable and ham flavors.
Serve split pea soup hot with crusty bread or as a satisfying meal on chilly days. Garnishing with additional chopped ham adds extra savory bites.
Ingredients
- 2 Tablespoons butter
- 1 small onion chopped
- 3 large carrot diced
- 3 celery diced, stalks
- 3 cloves garlic minced
- 1 pound split peas dried
- 6 cups chicken broth more if needed
- 1 1/2 - 2 pound ham bone
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon thyme fresh
- 1 cup ham for garnish, chopped
Instructions
- In a large pot over medium high heat add the butter and let it melt. Add the onion, carrots, celery, and garlic. Sauté until tender.
