  • 2 Tablespoons butter
  • 1 small onion chopped
  • 3 large carrot diced
  • 3 celery diced, stalks
  • 3 cloves garlic minced
  • 1 pound split peas dried
  • 6 cups chicken broth more if needed
  • 1 1/2 - 2 pound ham bone
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon thyme fresh
  • 1 cup ham for garnish, chopped

Instructions

  1. In a large pot over medium high heat add the butter and let it melt. Add the onion, carrots, celery, and garlic. Sauté until tender.
  2. Add in the split peas and chicken broth. Add in the ham bone. Bring to a boil and simmer uncovered for 60-90 minutes stirring occasionally. Cook until the peas split and the soup has thickened.
  3. Remove the ham bone and shred the ham. Add it back to the soup. Add salt, pepper, and thyme. Garnish with additional ham if needed.
