Spot Prawn Recipe: Butter Garlic Shrimp
Description
The recipe begins by tossing peeled spot prawns or other shrimp with dried Italian seasoning, garlic powder, and salt. They are then cooked in melted unsalted butter over medium heat just until pink and opaque on both sides, preserving a tender texture. The pan sauce is made by adding lemon juice and optional capers to the butter and simmering briefly. The cooked shrimp receive a coating of this sauce and can be garnished with fresh herbs such as thyme and chives.
This method keeps the shrimp rich and buttery, enhanced by the subtle herbal and lemon elements. The relatively quick cooking preserves shrimp's natural sweetness and texture.
When preparing spot prawns, removing their shells ahead of time is recommended for convenience. Alternate shrimp varieties work well, though spot prawns offer a distinctive buttery taste reminiscent of lobster.
Ingredients
- 1 pound spot prawn Or use another variety of shrimp, thawed and shells removed
- 1 teaspoon Italian seasoning Or use your favorite dried herb mixture, such as Herbes de Provence
- 1 teaspoon garlic powder
- ¼ teaspoon salt Skip if using salted butter, sea salt
- 4 ounces butter unsalted
- 1 lemon juiced
- 1 tablespoon capers optional
- 1 tablespoon fresh herbs I used thyme and chopped chives, torn or chopped into small pieces if needed, optional
Instructions
- Add the shrimp to a bowl and toss with the Italian seasoning, garlic powder and salt. Set aside.
- In a large pan, melt the butter over medium heat. Once the butter melts (but before it browns), add the shrimp in a single layer.
- Cook the shrimp for 1-2 minutes per side, until both sides are opaque and pink.Remove the shrimp from the pan and place them in a serving dish (if using).
- Add the lemon juice and capers (if using) to the pan, and simmer for about a minute. Spoon the melted butter mixture over the shrimp. Top shrimp with fresh herbs (if using) and serve immediately.
Notes
- Remove spot prawn shells up to one day ahead and refrigerate to streamline cooking preparation.
- Other shrimp varieties may be used, but spot prawns provide a uniquely buttery flavor similar to lobster.
