Ingredients
- 2 tablespoons butter
- 1 leek white and light green parts diced (about 1 cup, large
- 1 ½ cups carrot diced
- 1 cup radish diced
- 1 cup asparagus diced
- 3 tablespoons flour
- 1 cup chicken stock homemade or low sodium
- 2 teaspoons salt plus more to taste*
- black pepper to taste, freshly cracked
- 8 ounces mascarpone cheese
- 2 cups chicken diced or shredded
- ¾ cup peas frozen
- 2 teaspoons lemon zest
- 2 teaspoons lemon juice
- 2 tablespoons chive minced
- 1 puff pastry such as Darfour, all-butter, sheet
- flour for rolling
- 1 egg whisked together with 1 teaspoon water
