Spring Sherbet Cookie Sandwiches
Description
This recipe combines a buttery, fluffy cookie dough mixed with two types of sugar and baking morsels. Once baked and cooled, the cookies become soft yet structured enough to hold a scoop of lime sherbet between two cookies, forming a sandwich. The sherbet adds a cold, tart contrast to the sweet dough and is enhanced by extra baking morsels pressed on the outside.
The prepared cookie sandwiches are wrapped and frozen to ensure the sherbet filling remains firm and the cookies keep their shape when served chilled. These sandwiches offer a blend of rich sweetness, fruit-tangy sherbet, and playful texture from the morsels.
They make a refreshing and unique dessert option during warmer months or any time a cold, handheld sweet treat is desired.
