Description

This recipe combines a buttery, fluffy cookie dough mixed with two types of sugar and baking morsels. Once baked and cooled, the cookies become soft yet structured enough to hold a scoop of lime sherbet between two cookies, forming a sandwich. The sherbet adds a cold, tart contrast to the sweet dough and is enhanced by extra baking morsels pressed on the outside.

Ingredients

  • 1 1/2 butter sticks
  • 1 cup sugar
  • 1/2 cup white sugar
  • 2 egg
  • 2 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cup flour
  • 2 packages baking morsels Spring brand
  • 1 pint lime sherbet

Instructions

  1. Preheat the oven to 350 F.
  2. Melt the butter in the microwave and cool for 10 minutes.
  3. When the butter has cool put it in a mixer bowl, along with both beat until fluffly.
  4. Add the eggs and vanilla and mix well.
  5. Mix the baking soda, salt and flour together in a small bowl. Add all at once to the mixer and mix until well combined.
  6. Stir in one package of Spring Baking Morsels.
  7. Use a 1/4 cup measure to scoop out the cookie dough, and put balls well separated on cookie sheets lined with parchment paper. Bake 15 minutes.
  8. Cool the cookies on wire racks.
  9. Once the cookies are cool put a scoop of lime sherbet on one cookie, spread it out with a knife and top it with another cookie.
  10. Use the second package of Spring Baking Morsels to decorate the sherbet.
  11. Wrap the cookie sandwiches in plastic wrap and freeze until time to serve.
