Sriracha Chickpea Salad Wraps
Description
The recipe begins by draining chickpeas and mashing them together with mayonnaise, sriracha, chopped cilantro, lemon juice, and salt to create a creamy, slightly spicy base. The sriracha can be adjusted to preference, ensuring balanced heat without overwhelming. Flour tortillas are then layered with fresh spinach, thinly sliced or shredded carrot, diced bell pepper, and a generous portion of the chickpea salad. Folding and rolling the tortillas completes the wraps.
The combination yields a contrast between the smooth, tangy chickpea mixture and the crisp, fresh vegetables, offering both flavor and texture in each bite. These wraps are versatile since other vegetables like cucumber, shredded cabbage, or avocado can be substituted based on availability or preference.
Notes mention that any vegetables on hand can be used to customize the wraps. This flexibility lets cooks tailor the wraps to their tastes or pantry contents.
Ingredients
Sriracha Chickpea Salad
- 1 oz. can chickpeas $0.59
- 1/3 cup mayonnaise $0.55
- 1.5 Tbsp sriracha $0.09, to taste
- 2 Tbsp cilantro $0.25, chopped
- 1 tsp lemon juice $0.04
- 1/8 tsp salt $0.01
Wrap Ingredients
- 2 large flour tortillas $0.48
- 2 cups spinach $0.50
- 1 carrot $0.11, thinly sliced or shredded
- 1/2 bell pepper $0.75
Instructions
- Drain the chickpeas, then add them to a bowl with the mayonnaise, sriracha, cilantro, lemon juice, and salt. (You may want to start with less sriracha and add more to taste if you are sensitive to heat). Mash the chickpeas until they are fairly broken down and the dressing ingredients have combined.
- To build the wraps, place the tortillas on a work surface and add half of the spinach, carrot sticks, bell pepper, and sriracha chickpea salad to each one. Fold the sides in toward the center, then roll from the bottom up, like a burrito. Serve immediately or refrigerate until ready to eat.
Notes
- Any fresh vegetables such as cucumber, shredded cabbage, avocado, or tomatoes can replace or supplement the carrots and bell pepper based on preference or availability.
