Standing Rib Roast Recipe

This Standing Rib Roast recipe emphasizes a classic preparation of a prime cut, combining whole grain mustard, bacon grease, fresh thyme, and garlic for a flavorful crust. The method involves trimming the fat to expose rib bones and using an oven-safe thermometer to achieve medium-rare doneness, resulting in tender, juicy meat with a herbaceous crust. Resting the roast ensures the juices redistribute, making it an ideal centerpiece for a special meal.

Description

The Standing Rib Roast features a 5-6 pound rib primal trimmed to showcase the bones, allowing for even cooking and a striking presentation. A mustard and bacon grease rub with fresh thyme and garlic coats the surface, infusing the roast with savory and herbaceous notes. Roasting begins at a high temperature to develop a crust, then lowers to gently finish cooking until the internal temperature reaches 125°F, indicating medium-rare.

After roasting, the meat rests to retain moisture and finish cooking to an ideal tenderness. This roast serves well sliced for a holiday or celebratory meal and pairs with roasted vegetables and robust sides. The use of fresh herbs and the mustard-bacon butter mixture distinguishes the flavor profile, balancing richness with aromatic depth.

The attached thermometer is crucial to avoid overcooking, permitting precise timing. The cleaning of rib bones and fat trimming help in presentation and even cooking. Resting for at least 15 minutes before carving allows the juices to settle, ensuring moist slices.

Ingredients

Servings
  • 5-6 pounds standing rib roast
  • 2 1/2 tablespoons whole grain mustard
  • 1 tablespoon bacon grease
  • 1 tablespoon thyme fresh leaves
  • 2 cloves garlic minced
  • salt cracked
  • black pepper cracked

Instructions

  1. Preheat the oven to 450 degrees F and remove the upper rack to make space in the oven. Line a rimmed baking dish with foil or parchment paper and place the standing rib roast on it. If your roast is not trimmed, carefully cut the excess fat off the top to expose the rib bones. Look for the natural separation between the meat and the fat and cut along the separation. Clean the rib bones with a paring knife.
  2. Stand the roast with the rib point up. Combine the mustard, bacon grease, thyme, garlic, 1 teaspoon sea salt, and 1/2 teaspoon cracked black pepper in a small bowl. Mix well, then rub over the surface of the standing rib roast. Insert an oven-safe meat thermometer into the center of the roast, pushing the tip in until it's directly in the middle.
  3. Place the roast in the oven and roast for 20 minutes. Then lower the heat to 350 degrees F and continue roasting until the interior temperature reaches 125 degrees F. Remove from the oven and allow the roast to rest for at least 15 minutes before slicing.
