Star Crunch Cookies

Star Crunch Cookies are no-bake treats made by combining melted butter, semi-sweet chocolate chips, caramel chips, and mini marshmallows with rice krispie cereal. The mixture is shaped into flattened discs that harden to a chewy, crunchy texture featuring chocolate, caramel, and marshmallow flavors.

Description

This recipe starts by melting butter with semi-sweet chocolate and caramel chips in the microwave until mostly smooth. Mini marshmallows are added next and melted into the mixture, creating a sticky, sweet base. Rice krispie cereal is then folded in thoroughly, coating each piece with the melted mixture.

The mixture is scooped, rolled, and flattened into discs, then left to harden on parchment paper or a silicone mat. The resulting cookies combine the chewy softness of marshmallow and chocolate with the crisp texture of the cereal, making them reminiscent of classic treats but with additional caramel notes.

Because these cookies do not require baking, they offer an easy way to enjoy a textured, sweet snack. The chocolate and caramel chips provide rich flavor, while the mini marshmallows add chewiness and help bind the cereal together.
