  • 6 egg large
  • 5 lices Bacon crumbled, cooked
  • 1 cup cottage cheese
  • 1 1/4 cup gruyere cheese shredded
  • 1/8 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350° F. Spray a 12 cup muffin tin with non-stick cooking spray and sit aside.
  2. In a blender combine eggs, cottage cheese, salt and pepper and blend until well combined.
  3. Pour mixture into a large bowl and mix in gruyere cheese.
  4. Fill muffin tins (or silicone molds) ⅔ full with mixture and place cooked bacon on top of egg mixture.
  5. Cook for 25-30 minutes or until eggs are cooked. Watch egg bites starting at the 20 minute mark.
  6. Remove muffin pan from oven and let cool for 5 minutes. Remove egg bites from muffin tin and serve warm.
