Description
Steak Bites combines bite-sized sirloin cubes seasoned with a complex mix of spices to add depth and a subtle sweetness from brown sugar. The meat is patted dry to promote good browning, then seared at medium-high heat in olive oil for a short time to retain juiciness and create a crisp surface. The pan is deglazed with dry white wine, which integrates fond from the skillet, forming the base of the garlic butter sauce infused with sliced garlic, fresh thyme, and parsley.
The result is tender steak pieces with a crisp sear and a rich, aromatic sauce. This dish pairs well with roasted vegetables, potatoes, or buttered pasta for a hearty meal. It offers a concentrated steak flavor enhanced by the balance of savory and slightly sweet seasonings.
To maximize tenderness, tenderizing the steak gently with a meat mallet before cutting is recommended. The wine can be substituted with chicken broth if desired. Leftovers keep refrigerated up to 3 days or frozen for 3 months and reheat well in a skillet or oven with a touch of oil to maintain the crisp sear.

- ¾ teaspoon garlic powder
- ¾ teaspoon onion powder
- ¾ teaspoon paprika
- ¾ teaspoon brown sugar
- ½ teaspoon black pepper
- ½ teaspoon chili powder
- ½ teaspoon mustard powder
- 2-3 tablespoons olive oil plus more as needed
Garlic Butter Sauce
- ¾ cup white wine see notes, dry
- 4 tablespoons butter
- 4 cloves garlic thinly sliced
- 4 thyme sprigs, fresh
- 1 tablespoons parsley finely chopped, fresh
Instructions
- Combine the seasonings for the steak and set aside. Measure out remaining ingredients before beginning. Pro Tip: Cover the steak with plastic wrap and gently tenderize each side of the steak with a meat mallet for more tender results.
- Cut the steak into 1-inch cubes and pat the surface dry. Sprinkle with salt, I use up to 1 ½ teaspoons, but season to taste. Sprinkle with the seasoning mixture and rub it over the surface of each side. *It seems like a lot of seasoning, but it really transfers a lot of flavor into the meat and into the sauce.
- Heat olive oil in a large skillet over medium-high heat. Sear the meat in batches for 1 minute on each side, about 4 minutes per batch. The steak should be medium-rare. Remove and set aside. Repeat until all the meat is seared.
- Turn the heat off and add the wine. Set the heat to medium. Use a silicone spatula to “clean” the bottom and sides of the skillet, this will incorporate the brown fond into the sauce, making it more flavorful. Bring to a gentle boil and reduce by half, about 6 minutes.
- Add the butter, sliced garlic, and thyme. Simmer gently for 3 minutes.
- Reduce heat to medium-low. Add the steak back along with any juices from the plate and spoon the sauce on top. Allow it to heat through for 2 to 3 minutes, or until the steak is cooked to your liking. Sprinkle with parsley.
- Serve as an appetizer with toothpicks, or as a main course with mashed potatoes and roasted green beans.
Notes
- Use cuts like Filet Mignon, Top Sirloin, Ribeye, Strip Steak, or Tenderloin Tips for best results.
- Dry white wines such as Chardonnay or Sauvignon Blanc enhance the sauce; chicken broth is an alternative if avoiding wine.
- Do not overcrowd the skillet to prevent steaming; this ensures a crisp sear on the steak bites.
- Mushrooms can be added during the sauce reduction for extra flavor.
- Store cooked steak bites in an airtight container and refrigerate up to 3 days or freeze up to 3 months.
- Reheat gently in a skillet with oil or in a lightly greased baking dish covered at 350°F until warmed through.
