Ingredients
- 1 ½ pounds top sirloin, sirloin tips, or beef tenderloin, cut into 1-inch cubes
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 1 tablespoon vegetable oil
- 3 tablespoons unsalted butter
- 1 small yellow onion, diced (about ½ cup)
- 2 teaspoons garlic minced
- 2 ¼ cups (18 ounces / 540 g) beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- ¼ cup cold water
- 3 tablespoons cornstarch
- Parsley, chopped for garnish

Instructions
- Pat the cubes of beef dry with paper towels. Season evenly on all sides with salt and pepper.
- To a large skillet over medium-high heat, add oil. Once hot, add the beef in a single layer. Depending on the size of the skillet, you may need to work in batches. Cook for 3-5 minutes, stirring occasionally, until browned on all sides. Transfer the browned beef to a plate and tent with aluminum foil to keep warm.
- Reduce the heat to medium and add butter. Once melted, add the onions. Cook for 3-5 minutes, stirring occasionally, or until softened. Add garlic and cook for 1 more minute.
- Add beef broth, Worcestershire sauce, and soy sauce. Stir to combine, scraping up the browned bits in the skillet.
- In a small bowl, whisk the water and cornstarch together. Slowly drizzle the cornstarch mixture into the skillet, whisking constantly. Bring the mixture to a boil.
- Once boiling, add the meat (and any juices from the plate) back into the skillet. Reduce heat to low. Simmer for 5 minutes, or until heated through*.
- Garnish with chopped parsley. Serve warm with egg noodles, mashed potatoes, or rice.
Notes
- *After adding the steak bites to the sauce, just simmer until heated; do not overcook or the steak will get tough.
