Steak Fajita Marinade
Description
The Steak Fajita Marinade offers a citrus-forward base from orange and lime juice combined with minced garlic, ground cumin, chili powder, dried oregano, and smoked paprika. Olive oil provides fat to carry flavors and help the spices infuse the steak. Fresh chopped cilantro adds herbal brightness. Together, these ingredients create a marinade well suited for skirt or flank steak, common cuts for fajitas. The beef is coated and marinated for several hours to allow flavors to penetrate and tenderize the meat.
After marinating, the steak is patted dry, seasoned with salt and pepper, then grilled or cooked to the desired doneness. The marinade's spices give the steak a warm, slightly smoky, and tangy character that complements grilled vegetables and tortillas typically served with fajitas.
This marinade is calibrated for around 1 to 2 pounds of steak, with advice to double the quantities for larger portions to maintain flavor balance. Using it helps achieve consistent flavor and texture in home-cooked fajitas.
Ingredients
- ¼ cup olive oil
- ¼ cup orange juice
- 2 tablespoons lime juice (about 1 lime)
- 3 cloves garlic minced
- 2 teaspoons cumin ground
- 2 teaspoons chili powder
- 1 teaspoon oregano dried
- 1 teaspoon smoked paprika
- ¼ cup cilantro chopped
- 2 pounds skirt steak or flank steak
Instructions
- In a large resealable plastic bag (or a large mixing bowl), add all the ingredients except the steak and toss to combine.
- Add the steak and toss with marinade to coat.
- Seal the bag or cover and marinate in the fridge for 2 to 8 hours.
- Remove the meat from the marinade, transfer to a clean large surface and pat dry with paper towels.
- Season both sides of the steak with kosher salt and black pepper. Grill or cook to your desired internal temperature.
Notes
- This marinade works well with 1 to 2 pounds of steak; double ingredients for larger amounts.
- After marinating, pat the steak dry before cooking to get better searing.
- Serve grilled steak fajitas with your preferred sautéed vegetables and warm tortillas.
