Description
This marinade blends common sauces with a squeeze of lemon juice to create a flavorful liquid that permeates the steak. Ingredients like Worcestershire sauce and A.1. sauce add umami and a mild tang, while Italian dressing contributes herbs and acidity. Marinating for at least 4 hours or up to 36 hours in the refrigerator allows the flavors to penetrate and tenderizes the meat.
Steaks such as flat-iron, skirt, top sirloin, or flank are recommended. Before grilling, the meat is brought to room temperature, then cooked on a hot grill over 450–500°F. Initial charring on both sides seals in juices and adds flavor; finishing to the desired doneness is guided by recommended temperatures for rare to well done. Resting the meat afterward helps redistribute juices.
The marinade can also be used for freezer storage; freezing steak in it halts the marinating process and preserves flavor for up to three months. Cooked steak leftovers store well refrigerated for 3-4 days or frozen for three months if wrapped tightly.
Ingredients
- 1 cup Italian dressing
- ½ cup A.1. Original sauce
- ½ cup Worcestershire sauce
- 1 teaspoon lemon juice optional
- 1 pound steak flat-iron, skirt, top sirloin or flank steak, of choice
Instructions
- Combine dressing, A.1. sauce, Worcestershire sauce, and lemon juice in a large resealable plastic bag or airtight container. Mix well.
- Add steak to the marinade, making sure it is coated on all sides.
- Place in the refrigerator to marinate for at least 4 hours or up to 36 hours.
- When ready to cook, preheat the grill to 450–500°F. Allow steaks to come to room temperature.
- Place steaks on the grill and cook until golden browned and slightly charred (4–5 minutes). Flip steaks over and continue to grill to the desired doneness (see below; 5–7 minutes for medium).
- Let meat rest for 5 minutes before serving. The steak will continue to cook a bit, and the juices will distribute.
Notes
- Prepare the grill with oil before heating to prevent sticking.
- Use a meat thermometer for steaks 1½ inches or thicker to ensure preferred doneness.
- Freeze marinated steak for up to 3 months and thaw in the refrigerator before cooking.
- Store cooked steak in an airtight bag in the fridge for 3-4 days, or freeze for up to 3 months.
