Description
This Steamed Artichokes recipe involves careful trimming of the artichokes, including the removal of tough outer leaves and optionally cutting the leaf tips for ease of eating. The artichokes are placed in a steamer basket with a mix of dried herbs—oregano, thyme, rosemary—minced garlic, olive oil, and fresh lemon juice sprinkled over and between the leaves to infuse aromatics during steaming.
Steaming is done gently over simmering water for 40-45 minutes, allowing the artichokes to soften enough that the leaves can be pulled off easily. The resulting texture is tender with a slight bite, complemented by the blend of herbs and acidity from the lemon. Ingredients
- 4 Artichoke washed and trimmed
- 1 Tablespoon oregano dried
- 1 Tablespoon thyme dried
- 2 teaspoons rosemary dried
- 4 cloves garlic minced
- 1 lemon juiced
- 1/4 cup olive oil
- 2 teaspoons kosher salt
- 2 teaspoons black pepper
Instructions
- Trim the bottom and very top leaves of each artichoke. With sharp shears, cut the top 1/4 of each artichoke leaf (optional). Make a cross in the bottom of each artichoke.
- Mix herbs, salt and pepper in a small bowl.
- Fit a steamer basket or metal trivet in the bottom of a large pot. Fill pot with water, just until touching the bottom of the basket.
- Place artichokes on the trivet or steamer basket. Separate the leaves and sprinkle the herbs in between and over the artichokes. Drizzle with lemon juice and olive oil.
- Bring water to a boil, then reduce heat to a low simmer and cover. Steam artichokes, checking water level periodically, adding more if necessary. Steam for approximately 40-45 minutes, or until leaves are tender and pull away easily. Serve with a drizzle of Balsamic vinegar or Hollandaise sauce.
