Steel Cut Oatmeal Recipe with Cobbler Topping

This steel cut oatmeal recipe is topped with a warm fruit cobbler-style topping made from brown sugar, cinnamon, nuts, rolled oats, and banana slices. The oatmeal is cooked until tender and creamy, while the topping adds a crunchy and sweet contrast with toasted nuts and oats.

Description

The base oats are toasted gently in butter before simmering with water and salt. After simmering covered for 20 minutes, milk, vanilla extract, and cinnamon are stirred in for creaminess and flavor, then cooked further until fully tender. The result is a hearty, creamy steel cut oatmeal with layered flavors from vanilla and cinnamon.

The cobbler topping combines melted butter, brown sugar, flour, cinnamon, rolled oats, chopped walnuts, and sliced banana. This mixture is portioned over the hot oatmeal bowls, where the topping adds a sweet, textured, and nutty component, complemented by fresh banana slices and optional maple syrup drizzle.

This oatmeal makes a warming, satisfying breakfast with a balance of creamy porridge and crisp-tender topping. The nuts and oats provide crunchiness contrasting with the soft cooked oats, while banana and cinnamon add fruitiness and spice. Serving warm enhances the flavors and texture contrasts.
