This sweet and savory summer salad is a family favorite - filled with lettuce, fruit, and a sweet and sour dressing. Steph's Summer Salad is sure to become your favorite, too!

Ingredients
Dressing
- 1/2 cup vegetable oil (or other neutral oil)
- 4 tablespoons tarragon vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon sugar
- 3-4 tablespoons honey
Salad
- 1 (5 oz) bag spring mix lettuce
- 1 apple thinly sliced, Gala variety
- 1/2 red onion thinly sliced, small
- 2 kiwi halved and sliced
- 1 (11 oz) can mandarin orange drained and roughly chopped
- 3 oz craisins
- 1/4 cup almonds toasted, slivered
Instructions
- To make the dressing, combine all of the ingredients in a blender and blend until combined and creamy.
- Combine all of the salad ingredients in a large salad bowl and toss to combine.
- Pour the dressing over the salad just before serving*.
Notes
- *you will probably not need all of the dressing. Store any leftover dressing in a container in the refrigerator.
