Sticky BBQ Chicken Meatballs with Broccoli Slaw
Description
The main feature of this recipe is the chicken meatballs seasoned with minced garlic, sliced green onions, smoked paprika, and breadcrumbs, binding into moist, tender meat patties. After pan-frying them to achieve browned exteriors, the meatballs are simmered in a mixture of BBQ sauce, honey, and water that thickens into a sticky glaze, infusing the meat with sweet and smoky flavor.
Accompanying the meatballs is a crunchy broccoli slaw dressed with a creamy mix of Greek yogurt, mayonnaise, honey, and apple cider vinegar, balanced with salt and pepper. This slaw adds freshness and a crisp texture against the meatballs' glaze. Serving the dish with rice makes it a filling and balanced meal.
The method highlights cooking the meatballs thoroughly to an internal temperature of 165°F, and layering flavors by browning the meat first and then simmering in sauce. Garnishing with additional green onions adds a final touch of brightness. The dish combines sweet, smoky, tangy, and creamy elements for satisfying contrast.
Ingredients
- 1 pound ground chicken
- 1 egg lightly beaten, large
- 2 garlic minced, cloves
- 2 green onion thinly sliced, plus more for serving
- ⅓ cup seasoned bread crumbs
- ½ teaspoon smoked paprika
- salt kosher salt
- black pepper kosher salt
- 1 tablespoon olive oil
- 1 cup BBQ sauce
- ¼ cup honey
- ¼ cup water
- rice for serving
broccoli slaw
- 1 (12 ounce) broccoli slaw bagged
- ¼ cup yogurt plain, Greek
- ¼ cup mayonnaise
- 2 tablespoons honey
- 2 tablespoons apple cider vinegar
- salt kosher salt
- black pepper kosher salt
Instructions
- In a bowl, combine the chicken with the egg, garlic, onions, breadcrumbs, smoked paprika and a big pinch of salt and pepper. Mix until just combined and form the mixture into small meatballs. (Or large meatballs! Whatever you prefer!)
- Heat the olive oil in a nonstick skillet over medium heat. Add the meatballs in a single layer and brown on all sides. Once browned, transfer the meatballs to a plate.
- In the same skillet, add in the BBQ sauce, honey and water. Whisk it together. Bring the mixture to a simmer. Cook for 1 minute. Add the meatballs back in and cook for a few minutes as the sauce thickens. You want the internal temperature of the meatballs to reach 165 degrees F before serving. Sprinkle with more green onions.
- Serve with broccoli slaw and rice!
