Sticky Bun Chia Seed Pudding
Description
This pudding is made by whisking unsweetened cashew milk with chia seeds, agave nectar, brown sugar, cinnamon, and vanilla extract, then refrigerating overnight to allow the chia seeds to absorb liquid and form a soft pudding texture. The spices and sweeteners provide a warm, subtly sweet base that thickens as it rests.
The sticky pecans are prepared by boiling maple syrup, agave nectar, and salt, then stirring in chopped pecans before letting them sit to achieve a sticky coating. These pecans add crunch and a caramel-like sweetness that complements the pudding’s creaminess and spice.
Served by spooning the sticky pecans on top, this pudding offers textural contrast and a flavor profile inspired by sticky buns without the baked dough. The notes clarify that nutrition values are estimates.
