Ingredients

Servings
  • 3-4 heads butter lettuce or baby romaine
  • 1 bunch chive snipped, fresh
  • 2 avocado sliced
  • 4 cucumber sliced, Persian
  • 2 peach sliced, ripe
  • 2 nectarines sliced, ripe

Hot Honey Vinaigrette

  • 1 lemon juiced
  • 3 tablespoons red wine vinegar
  • 6 tablespoons olive oil
  • 1 shallot finely minced
  • 2 cloves garlic finely minced
  • 2 tablespoons hot honey
  • cup Parmesan Cheese freshly grated
  • salt Kosher salt and freshly cracked, to taste
  • black pepper Kosher salt and freshly cracked, to taste

Instructions

  1. Toss the lettuce, avocado, fruit, cucumbers and snipped chives with the vinaigrette and serve on a large platter. Add extra parm on top if desired.

For the Vinaigrette

  1. Whisk all ingredients together until emulsified.

Notes

  • If you’ve never had hot honey before – it’s just a delicious bottle of honey with a touch of spice. Nothing too extreme but enough to give whatever you’re using it on an extra dimension of flavor. It’s perfect on the peaches and avocado in this salad.
