Ingredients
- 1 pound dried pasta such as elbow macaroni, small shells, or similar shape, medium shape, 450 grams
- 3 cups chicken broth 710 milliliters
- 2 cups whole milk 473 milliliters
- 1 1/2 teaspoons Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper freshly ground
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 6 ounces cheddar cheese freshly shredded, 170 grams
- 4 ounces mozzarella cheese freshly shredded, firm, 113 grams
- 2 ounces Parmesan Cheese freshly grated, 57 grams
Instructions
- In a large saucepan, combine the pasta, chicken broth, and milk over medium heat.
- Cook, stirring often, until al dente, barely tender, about 15 minutes. If the liquid evaporates before the pasta is done, add a little more broth or milk.
- Stir in the Dijon mustard, salt, paprika, black pepper, garlic powder, and onion powder.
- Remove from heat and wait for the mixture to stop bubbling.
- Stir in the shredded cheddar, mozzarella, and Parmesan, a handful at a time, until smooth.
- Adjust seasonings to taste and serve immediately.
