Stovetop Chicken and Rice

Stovetop Chicken and Rice combines tender diced chicken with sliced mushrooms and peas in a creamy, herb-seasoned broth with basmati rice. The method involves sautéing ingredients separately, then simmering them together until the rice is tender, resulting in a flavorful, comforting one-pan meal. The addition of half and half and butter adds richness, while optional Parmesan adds a savory finish. This dish makes a hearty, warm dinner with a creamy texture and subtle herb notes.

Description

Stovetop Chicken and Rice brings together diced boneless, skinless chicken breast or thighs with mushrooms, onions, and peas in a herb-infused broth containing poultry seasoning, thyme, and a bay leaf. The recipe starts by tenderizing mushrooms and onions separately before browning the seasoned chicken with garlic and deglazing with white wine. Then the mushrooms, chicken broth, basmati rice, and bay leaf are added and simmered until the rice is cooked through and tender. After removing the bay leaf, peas, butter, and half and half are stirred in to create a creamy consistency. Parmesan cheese can be sprinkled on top for an optional touch of savory flavor and richness.

The final dish features tender pieces of chicken and mushrooms with soft, creamy rice and sweet peas. The poultry seasoning and thyme provide gentle herbal notes balancing the richness from butter, half and half, and Parmesan. This stovetop method produces a warm, one-pot meal with a comforting texture and a mix of tender ingredients perfect for cooler days or a filling weeknight dinner.

This recipe is served best warm on its own as a complete meal. It pairs well with simple green salads or steamed vegetables if desired but is flavorful and filling enough to serve on its own. The creamy texture and herb seasonings make it an inviting home-style dish that is fairly straightforward to prepare.
