  • 1/2 cup cashew nuts raw
  • 1/2 cup almonds unsalted
  • 7 Medjool dates
  • 1 cup freeze dried strawberries
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 tablespoon water more or less as needed

Instructions

  1. In a food processor add the cashews and almonds and pulse until they are finely ground.Add in the remaining ingredients and pulse until everything starts to come together like a dough ball. Scrape down the sides of the bowl as needed.
  2. Form into approximately 20 balls about 2 teaspoons to scant 1 tablespoon each. Store the energy bites in an airtight container in the refrigerator or freezer.
