Strawberry and Kale Smoothie Bowl

For a new spin on "milk and cereal" try this Strawberry and Kale Smoothie Bowl. It's the perfect way to start the day now that strawberries are in season!

Ingredients

Servings
  • 2 cups kale big stems removed
  • 2 cups strawberries fresh or frozen or a combo
  • 4 banana peel before freezing, the riper they are the sweeter they'll be, frozen
  • 1 cup milk or more (see note at end of recipe)
  • 1/2 cup rolled oats
  • 1/4 cup coconut unsweetened, shredded

Instructions

  1. Blend kale, strawberries, and bananas until smooth. 
  2. Toast the oats and coconut in a dry skillet over medium-low heat until the coconut begins to turn golden brown, 2 to 3 minutes. 
  3. Divide the smoothie into bowls, top with the oats and coconut, and serve with spoons. 

Notes

  • If you use frozen strawberries you may want to increase the milk quantity to 1 1/2 cups as more liquid will be needed. And feel free to choose whatever variety you'd like; we used whole milk but you could also sub almond milk.
  • We recommend organic ingredients when feasible.
