Strawberry Banana Oat Muffins

These muffins  are super moist, not too sweet, and almost healthy. The oatmeal streusel topping adds the perfect little crunch that you are going to love!!

Ingredients

Servings

Oatmeal Streusel

  • ¼ cup old-fashioned oats
  • 1 tablespoon brown sugar
  • 1 pinch ground cinnamon
  • 1 tablespoon butter melted, salted

Muffins

  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large egg beaten
  • 3 banana about 1 cup, mashed, ripe
  • 2 cups + 1 tablespoon all-purpose flour divided
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups strawberry fresh, chopped

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit. Spray a muffin pan with nonstick cooking spray and set aside.

Oatmeal Streusel

  1. Combine the oats, brown sugar, ground cinnamon, and melted butter in a medium bowl and set aside.

Muffins

  1. Add the butter and sugar to a large bowl and beat with a hand mixer or a stand mixer fitted with the paddle attachment until light and fluffy.
  2. Add the eggs and bananas to the sugar mixture and beat until combined.
  3. Add 2 cups of flour, baking soda, and salt to a medium bowl and whisk to combine. Slowly add the flour mixture to the sugar mixture and mix with the hand mixer until just combined.
  4. In a separate bowl toss the chopped strawberries with the remaining tablespoon of flour. Gently fold the coated strawberries into the muffin batter.
  5. Fill each well of the muffin pan until they are ¾ of the way full. Sprinkle the tops with the streusel topping, distributing it evenly between all 12.
  6. Bake with the oven at 425 degrees Fahrenheit for 5 minutes before reducing the oven to 350 degrees Fahrenheit. Continue to bake for an additional 12-15 more minutes, or until a toothpick inserted in the center of a muffin comes out clean.
  7. Let muffins cool on a cooling rack for at least 10 minutes before enjoying.
