Strawberry Bruschetta

Strawberry Bruschetta combines toasted baguette slices topped with creamy goat cheese, fresh diced strawberries mixed with basil and sugar, and a sticky balsamic glaze. This appetizer contrasts sweet and tangy flavors with crunchy bread and smooth cheese, creating a bright, fresh bite suitable for starters or light snacks.

Description

This Strawberry Bruschetta recipe begins with a balsamic glaze made by reducing balsamic vinegar and sugar until syrupy. The fresh strawberry topping is prepared by combining diced strawberries, sugar, and chopped basil, melding sweetness with herby freshness. Baguette slices are lightly brushed with olive oil and baked until golden and crisp. Once cooled, each toast is spread with goat cheese, topped with the strawberry mixture, and finished with a drizzle of the balsamic glaze.

The combination delivers a balance of creamy, sweet, tangy, and crunchy elements perfect for serving as an appetizer or party finger food. The fresh basil adds a subtle aromatic note that brightens the strawberries. The toasty baguette provides a sturdy base offering a satisfying crunch alongside the soft cheese and juicy fruit.

Ingredients

Servings

For the Balsamic Glaze

  • ½ cup balsamic vinegar
  • 1 teaspoon sugar

For the Bruschetta

  • 1 pound strawberry diced, fresh
  • 1 teaspoon sugar
  • 4 basil chopped, fresh leaves
  • 1 baguette
  • 2 Tablespoons olive oil
  • ½ cup goat cheese or another soft cheese such as brie or cream cheese

Instructions

  1. Preheat oven to 375 degrees. Place balsamic vinegar and sugar in a small saucepan, bring to a light simmer, and reduce until it reaches about half the original volume and becomes slightly syrupy (about 5 to 10 minutes). Watch it closely, you don't want it to reduce too much and become TOO thick. You just want it to be thick enough to coat a spoon when dipped in.
  2. Combine strawberries, sugar, and basil in a medium-sized bowl. Set aside.
  3. Slice the baguette into about 20-24 slices (about ½" thick) and place on a baking sheet. Brush lightly with olive oil and place in the oven for about 5 minutes or until the slices become golden brown, allow to cool for 3 to 4 minutes.
  4. Spread a little goat cheese on each baguette slice then add a spoonful of strawberry mixture. Drizzle a little balsamic glaze over each piece and serve!
