Strawberry Cashew Smoothie

This Strawberry Cashew Smoothie blends soaked cashews, frozen strawberries, frozen cauliflower, cashew milk, and hemp hearts into a creamy, textured drink. The mixture is silky with subtle nutty notes from the cashews, balanced by the natural sweetness of strawberries and honey. Chia seeds and bee pollen add nutritional texture and a slight earthiness. It's a nourishing smoothie with both fruit and plant-based ingredients that make it filling and suitable for a snack or light breakfast.

Description

The Strawberry Cashew Smoothie combines soaked cashews with frozen strawberries and cauliflower, producing a creamy and slightly thick consistency. The cashews soften after soaking, blending smoothly with cashew milk and the natural sweetness of honey, while hemp hearts and chia seeds contribute a lightly nutty, slightly grainy texture. Bee pollen adds a subtle floral note on top, used both inside and as a garnish. Vanilla extract and salt round out the flavors to balance sweetness and enhance complexity.

The smoothie is prepared by thoroughly soaking cashews to soften them for blending, which ensures a smooth, rich texture. The ingredients are then pureed until smooth. Frozen fruit and vegetable components provide chill and thickness without added ice or water diluting the flavor. The inclusion of cauliflower adds volume and mildness without overpowering the strawberry flavor.

This smoothie is well suited for a nutrient-dense breakfast or snack, offering natural sweetness combined with plant proteins and omega fats from hemp hearts and chia seeds. The texture is creamy and smooth with lightly nutty undertones. It can be served immediately for the best texture and flavor.

Ingredients

Servings
  • 1/3 cup cashews soaked, unsalted
  • 1 1/2 cups strawberry frozen
  • 1 1/2 cups cauliflower frozen
  • 1 1/2 cups cashew milk
  • 2 tablespoons hemp hearts
  • 2 tablespoons honey
  • 1 tablespoon chia seeds
  • 1 teaspoon bee pollen plus extra for sprinkle
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt sea salt

Instructions

  1. First things first! You want to soak the cashews. They only need a few hours, but I put mine in the fridge overnight and soaked them for about 8 hours. I wouldn't do much longer!
  2. All all the ingredients to a blender and puree until creamy and smooth. Pour into glasses, top with bee pollen and serve!
