Strawberry Champagne

Strawberry Champagne is a sweet, easy-to-make bubbly cocktail. It requires just four simple ingredients. Perfect for Easter brunch, Valentine's Day or any other time you want some bubbly.

Strawberry Simple Syrup

  • ½ cup water
  • ½ cup granulated sugar
  • ½ cup strawberries chopped

Individual Easter Strawberry Champagne

  • 1 ½ oz. strawberry simple syrup
  • 6 oz. sparkling wine prosecco, cava, champagne or Brut Rosé Champagne are all OK

Instructions

Make the Strawberry Simple Syrup

  1. In a small saucepan, combine the water, sugar and chopped strawberries over high heat. Bring to a simmer, and heat until all the sugar has dissolved.
  2. Remove from the heat, and let the flavors infuse for about 30 minutes.
  3. Blend the simple syrup together, then transfer to an 8 oz. mason jar.
  4. Refrigerate until chilled.

Make Easter Strawberry Champagne

  1. In a champagne glass, pour in the Strawberry Simple Syrup.
  2. Top the Strawberry Simple Syrup with the champagne.
  3. Stir together, and enjoy immediately!

Notes

  • This recipe was updated in December 2020. The original recipe calls for making a strawberry puree, then using that puree in the simple syrup. I've combined that step with making the simple syrup to consolidate the time/effort needed to make the strawberry syrup. The original recipe called for Brut Rosé Champagne, which is still delightful, but I've made a note that you can use any type of sparkling wine.
  • The simple syrup makes enough for FOUR cocktails. The recipe can be easily doubled or tripled if you're making drinks for a crowd.
  • A note on sparkling wine: You want to purchase something that's labeled brut. The sparkling wine does not need to be sweet, so steer away from anything labeled "demi-sec” or “doux" because those are traditionally served as dessert wines. If you need assistance with this, ask the friendly clerk at your local liquor store for their opinion on what will go best in this drink.
