Strawberry Chicken Salad with Strawberry Balsamic Dressing
Description
The salad features a base of chopped romaine lettuce topped with tender cooked chicken pieces, sliced fresh strawberries, dried cranberries for chewiness, thinly sliced red onion for mild sharpness, creamy crumbled goat cheese, and crunchy sliced almonds. The components combine fresh and dried fruits with protein and greens for a balanced mix.
The strawberry balsamic dressing is prepared in a blender by puréeing fresh strawberries with balsamic vinegar, extra virgin olive oil, Dijon mustard, minced garlic, salt, and black pepper. This creates a smooth, tangy, slightly sweet dressing that complements the salad ingredients without overpowering them.
To serve, the salad ingredients are tossed together and coated evenly with dressing or the dressing is drizzled on individual portions. This salad makes a light meal or a flavorful starter suited for warmer weather or light lunches.
