Filling:

  • 1/3 cup orange juice
  • 3 tablespoons sugar
  • 3 cups strawberries chopped, fresh

Topping:

  • 1/2 cup butter , softened
  • 1/2 cup sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2/3 cup flour
  • 1/4 teaspoon baking powder
  • 1 pinch salt
  • 1 tablespoon sanding sugar coarse

Instructions

  1. Preheat oven to 375 degrees and spray an 8x10 baking dish with baking spray.
  2. In a large bowl, whisk together orange with 3 tablespoons sugar until dissolved.
  3. Add strawberries to baking dish and pour orange mixture over strawberries.
  4. In a stand mixer, cream butter and 1/2 cup sugar until light and fluffy then add in the egg and vanilla extract untill well blended.
  5. Sift together the flour, baking powder, and salt.
  6. Add flour mixture to the wet ingredients until just combined.
  7. Add spoonfuls of batter over the strawberries then sprinkle with sanding sugar.
  8. Bake in oven for 35-40 minutes until golden brown.
